- 6 eggs
- 3 cups oat flour
- 2 cups almond flour
- 2/3 cup cocoa powder
- 4 tsp baking powder
- 2 tsp cinnamon
- 1 tsp salt
- 1 cup chocolate chunks
Directions
- Preheat the oven to 425°F (220°C).
- Blend the cottage cheese until smooth.
- Mix the cottage cheese, applesauce, sugar, oil, vinegar, vanilla, and eggs.
- Combine oat flour, almond flour, cocoa powder, baking powder, cinnamon, and salt.
- Gradually mix dry ingredients into wet ingredients.
- Fold in the chocolate chunks, saving some for topping.
- Line a muffin tin and lightly grease with coconut oil.
- Fill each muffin cup just over the top.
- Sprinkle remaining chocolate chunks.
- Bake at 425°F for 5 minutes, then reduce heat to 350°F (175°C) and bake for 14-16 minutes.
